Alfie's 3 bean stew

Ingredients

For the stew: 

  • 1 tin cannellini beans  
  • 1 tin black eye peas 
  • 1 tin red kidney beans (drained and rinsed) 
  • 1 to 2 carrots 
  • 1 white onion 
  • 1 to 2 stalks of celery 
  • 1 to 2 cloves of garlic 
  • 3 to 5 cherry tomatoes 
  • 2 bay leaves 
  • Few sprigs of thyme 
  • Fresh parsley  

 

Instructions

  1. Wash and peel the celery, carrots and onion. 
  2. Cut celery, carrots and onion into small cubes (Mirepoix). 
  3. Cut the cherry tomatoes in half. 
  4. Put everything in a pot. 
  5. Add some olive oil and let everything cook/sweat slowly. You can cover the pot and even add a touch of water if you need to.
  6. Once everything is nice and soft, onions translucent then add all the beans. 
  7. Stir the beans for 10 to 15 seconds and then cover with water (hot kettle water) or veg stock if you want to. 
  8. Add some salt and pepper then cover. 
  9. Let it cook until everything is nice, soft and creamy. 
  10. Add salt and pepper if you need to. Serve with fresh parsley 

 

Ingredients for the mixed salad

  • Any salad leaves that you might have available: spinach/rocket/lettuce... 
  • 2 to 3 yellow and red peppers (sliced) 
  • 1 to 2 red onions (sliced) 
  • A handful of cherry tomatoes (cut in half) 
  • Fresh basil if available 
     

Instructions

Add all of your ingredients together 

Dress salad with extra virgin olive oil, salt, pepper, the vinegar of your choice/lemon if you prefer.
