Alfie's 3 bean stew
Ingredients
For the stew:
- 1 tin cannellini beans
- 1 tin black eye peas
- 1 tin red kidney beans (drained and rinsed)
- 1 to 2 carrots
- 1 white onion
- 1 to 2 stalks of celery
- 1 to 2 cloves of garlic
- 3 to 5 cherry tomatoes
- 2 bay leaves
- Few sprigs of thyme
- Fresh parsley
Instructions
- Wash and peel the celery, carrots and onion.
- Cut celery, carrots and onion into small cubes (Mirepoix).
- Cut the cherry tomatoes in half.
- Put everything in a pot.
- Add some olive oil and let everything cook/sweat slowly. You can cover the pot and even add a touch of water if you need to.
- Once everything is nice and soft, onions translucent then add all the beans.
- Stir the beans for 10 to 15 seconds and then cover with water (hot kettle water) or veg stock if you want to.
- Add some salt and pepper then cover.
- Let it cook until everything is nice, soft and creamy.
- Add salt and pepper if you need to. Serve with fresh parsley
Ingredients for the mixed salad
- Any salad leaves that you might have available: spinach/rocket/lettuce...
- 2 to 3 yellow and red peppers (sliced)
- 1 to 2 red onions (sliced)
- A handful of cherry tomatoes (cut in half)
- Fresh basil if available
Instructions
Add all of your ingredients together
Dress salad with extra virgin olive oil, salt, pepper, the vinegar of your choice/lemon if you prefer.
